Strawberry Rhubarb Pie Tapioca Box

Ingredients

2 C chopped Red Rhubarb
2 C Strawberries (whole or sliced)
1-1/4 C Sugar
1/4 C tapioca (minute)
1 tsp orange zest (optional)
1 T butter cubed small
1 beaten egg white + 1 tsp water
  Large Granule Sugar
  extra fine sugar mixed with some cinnamon

Preparation

  1. Mix the strawberries, rhubarb, sugar, tapioca, zest and in a large bowl and let set for 15 minutes.
  2. Pour into pie crust.
  3. Dot top of filling with butter
  4. Roll out top pie crust and place on top of pie filling
  5. Crimp pie crust edges
  6. Cut several slits in the top of the pie
  7. Sprinkle fine sugar & cinimon mix
  8. sprinkle large granule sugar
  9. Bake for 45 - 50 minutes on 400 degrees F
  10. Serve witih vanilla ice cream.
